This committees focuses on identifying, analyzing, prioritizing, and acting on current and pending industry trends affecting rep chefs. Trends that are affecting the changing roles of manufacturers’ representatives and relations as it relates to culinary. They have also developed a M Chef Certification.

Increase MAFSI member and industry awareness of the value of culinary training and selling as well as identify and develop educational programs addressing specified and broad-based culinary training and develop a certification program for rep chefs that will become a new industry standard.

Chef Experience - Chef De Partie

Worked as chef de partie, ran a station in a restaurant or hotel and was responsible for the station's performance for at least 5 years.

Has managed a team of at least three (3) or more with references and roles provided.

Holds an active Certified Foodservice Professional (CFSP) Certificate

Certification - ServSafe

Is ServSafe certified at a Manager Level with an active certificate.

Industry Experience

Has worked in the manufacturers rep industry for at least 24 months.

Has an active membership in at least one Chef Association (e.g. ACF).

Exam - Written          

Written Exam: MAFSI 101 Basic Channels, Equipment Solution Basics, ethics and professionalism.  Exam to be done at either MAFSI or NAFEM and will be proctored by an M Chef Committee Member.  Must score at least 75% on exam

You must have at least 6 points to be eligible for the M Chef Level 1 Star Certification out of 9 possible points.

M Chef 2 Star Certified (must have 9 points to qualify)

Chef Experience - Sous Chef

Has been a Sous Chef or second in command of a brigade for two year or more.

Has been a CDC (Chef de Cuisine) for two (2) years or more.

Has been a professional chef for a minimum of ten (10) years.  This time frame can include time as a rep group chef.

Has managed a team of at least ten (10) or more with references and roles provided.

Has worked in the manufacturers rep industry for at least 48 months.

Holds a Culinary Degree or Certificate.

Exam - Written          

Written Exam: Specific equipment details/issues, solution orientation around dynamics and scenarios in regards to fitting a food program with the right piece of equipment, food service 201 questions   Must score at least 75% on exam.

Practical Exam: Advanced culinary techniques via equipment, e.g., show sous vide, egg cookery, high volume protein temps programs in combi and blast chiller or combi used in four different methods for speed, consistent quality.

You must have at least 9 points to be eligible for the M Chef Level 2 Star Certification out of 12 possible points.

Has Executive Chef experience to include managing a culinary operation.

Has cooked and managed the cooking for over 500 ppl in one sitting with example provided.

Has been a professional chef for a minimum of twenty (20) years.  This time frame can include time as a rep group chef.

Has worked in the manufacturers rep industry for at least ten (10) years.

Holds a bachelor’s degree or higher in Food Science or Food Studies.

Has completed wine training Level 1 Sommelier or equivalent.

Written Exam: Provide a menu and kitchen equipment concept around a randomly chosen concept to include an outline of concepts with a detailed .

Practical Exam: Provide a live demo in front of the board on a piece of equipment chosen by the Board of Directors.
